1 pastry case ideally puff pastry
12 small leeks
4 tablespoons of unsalted butter
1 teaspoon of salt
freshly ground pepper
2 large eggs
1/4 cup of cream
4 slices of smokey bacon
1 cup of Gruyere

  1. Trim leeks and cut into small discs.
  2. Melt butter in frying pan and add leeks, salt and pepper. Cover the leeks and cook till soft but not browned, about 20 mins. Drain off any excessive liquid.
  3. Combine eggs, cream in a bowl add the leeks and mix. Add grated gruyere and bacon reserving a little cheese for the top.
  4. Poor mixture into pastry shell and sprinkle cheese on top.
  5. Bake in oven for 45 mins. You won't be disappointed.
