Cooking time: 30 - 35 mins (Serves 6)

Ingredients: 500g Parsnips, 500g Carrots, 3 tbsp olive oil, 3 tbsp clear honey, 1 tbsp dark soy sauce, sea salt, zest 1 orange, 2 tsp chopped parsley.

Peel carrots and parsnips. Cut in half lengthways. Put into a roasting tin and toss with oil & salt. Roast in oven at 190°C / gas mark 5 for 25 - 30mins until golden. Add the honey, soy sauce & orange zest. Toss to coat and return to oven for 10 mins till caramelised.
Put into a serving dish, pour over any pan juices and sprinkle with the chopped parsley. Delicious!
