Recipe

1 large fish (whole with head, white fish preferably, allow around 1/2 lb per person)
Juice of one lemon
2 large finely chopped onions
3 cloves crushed garlic
1 lemon sliced
2 tablespoons finely chopped parsley
Salt and pepper

  1. Wash the fish under cold water - hopefully, your fish monger has gutted it!
  2. Rub the inside with salt, pepper and lemon juice and leave for half an hour.
  3. Meanwhile, slowly fry off onions until softened. Then add garlic. Place to the side.
  4. Drain off juice from fish and place on a baking sheet.
  5. Open the fish, sprinkle on parsley, and place sliced lemons along the length of the fish
  6. Spoon onion and garlic mix over the lemons and close fish.
  7. Wrap in foil and bake in a moderate oven 170°C/325of/gas mark 3 for around 40 mins, turning half way through.
  8. Remove foil and cook for around 15 mins in a slightly hotter oven (200°C/gas 5) until fish has browned slightly.
  9. Remove from oven and serve with new boiled potatoes, and a crisp green salad. It's delicious.

N.B Some fish may take longer than others, so check flesh at widest part to see it's cooked.You can also pop a few baby tomatoes around the fish when baking. This will add moisture, they taste great, and creates a colourful garnish too.
